Swedish sandwich cake | smörgåstårta

I remember the first time I had a Swedish sandwich cake in Sweden, it was during summer and they served the cake during “fika” (Swedish word that is usually translated as coffee and cake break). The cake was beautifully decorated and especially the top of the cake was magnificent and luxurious looking with all the ingredients. 

I looked at my piece of cake on my plate and I could see several layers of different fillings. The taste was very special, all the different kinds of layers just mixed into something incredible and it all was very delicious. Today's sandwich cake is based on my memory from that moment, and I have to say that I feel quite satisfied with my sandwich cake and the best part is that this cake is very easy to make but still tastes the best!

Now, let's make a Swedish sandwich cake.

Ingredients:
bread slices (without crust)
shrimps
lemon 
egg
avocado
mayonnaise
dill
salt 
white pepper
cream cheese
salmon (can use fresh (sashimi) salmon or smoked salmon pieces)
cucumber
whipped cream
cheese
tomato

First layer:
100 gram chopped shrimps
lemon juice from half a lemon
around 10 gram of chopped dill
salt and white pepper (Adjust accordingly to your taste)
mayonnaise (Adjust accordingly to your taste)
Mix all of the mentioned ingredients.

Second layer:
2 chopped eggs
2 tablespoon cream cheese
Mix all of the mentioned ingredients.

Third layer:
1 avocado 
lemon juice from half a lemon
Mix all of the mentioned ingredients.

Cucumber flowers:
Cut the cucumber to round slices. 
Use a flower-shaped cutter to make the cucumber into flowers.

Salmon roses:
Roll one piece of salmon together and add another piece to create petals. 

Steps to make the sandwich:
1. Add three-piece of bread. (Cut out the crust)
2. Add the first layer of filling on top of the bread and then add another three slices of bread. 
3. Add the second layer of filling on top of the bread and then add another three slices of bread.
4. Add the third layer of filling on top of the bread and then add another three slices of bread. 
5. Cover the whole cake with whipped cream. 
6. Add the cucumber flowers on the sides of the cake.
7. Decorate the top of the cake with tomatoes.
8. Decorate the top of the cake with rolled cheese
9. Add some shrimps on top of the cake with some dill.
10. Finish the cake by adding the salmon roses.

Tip: Leave the sandwich cake in the fridge for a few hours so it will become moist and the different flavors will blend in nicely.
