Today we are making a real classic cake, a fruit cake that is very easy to make and yet incredibly delicious.
The base recipe is from a sponge cake, In Sweden, we call Sponge cake for “Sockerkaka” and this cake goes well with fika.
By adding chopped cashew nuts, raisins, and mixed dry fruit to our sponge cake it will then become a fruit cake.
I love making fruit cake, it goes fast to make this cake and only a hand mixer is needed.
Ingredients :
75-gram butter (room temperature)
2 dl sugar (in this recipe we are using brown sugar)
2 eggs
1 teaspoon vanilla sugar
1 teaspoon baking powder
3 dl flour
1 dl milk
0.25 dl chopped cashew nuts
0.5 dl raisins
0.25 dl mixed dry fruits.
Steps:
- In a big bowl, add butter and sugar and use a hand mixer.
- Add 2 eggs and continue to use the hand mixer.
- Add flour, vanilla sugar, baking powder, milk and continue to mix with the hand mixer to make it into a smooth paste.
- Add chopped cashews nuts, raisins, mixed dry fruits, and use a spoon to mix it carefully.
- Add the mixture to a cake form.
- Bake in the oven at 175 degrees Celsius for around 35 minutes.
- Use a wooden stick to test if the cake is ready, (like a barbecue stick) stick into the cake and if the wooden stick is dry then the cake is done!
